Ingredients
- 2 sticks (1 cup) butter, room temperature
- 1/2 cup Brown Sugar
- 1/3 cup granulated sugar
- 2 large eggs
- 3 cups Kodiak Birthday Cake Power Cakes Flapjack & Waffle Mix
- 1 teaspoon cornstarch
- 1/2 teaspoon baking soda
- 1/2 cup sprinkles
Directions
- Preheat the oven to 375° F. Line a baking sheet with parchment paper.
- Place the butter in a large mixing bowl along with both types of sugar. Beat for 2-3 minutes, until light and fluffy.
- Beat in the eggs, one at a time, thoroughly mixing in after each addition.
- Add the Kodiak mix, cornstarch, and baking soda to a separate mixing bowl and whisk to combine.
- Add the dry ingredients to the bowl of wet ingredients and beat just until combined.
- Let the dough rest for 10 minutes (this allows the whole grains to absorb more moisture before baking).
- Scoop mounds of dough (about 1/4 cup in volume) and roll into a ball. Dip 1/2 of the ball in sprinkles, pressing them into the dough.
- Place dough balls on the prepared baking sheet, undipped side down, and press the dough ball down just slightly. Space cookies at least 4 inches apart as they will spread.
- Bake the cookies for 9-10 minutes or until just golden brown on the edges. Cool on a wire rack.
- Store in an airtight container.
