Ingredients
- 6 Kodiak Buttermilk & Vanilla Thick and Fluffy Power Waffles, thawed
- 6 large eggs
- 1-1/2 cups whole milk
- 1 teaspoon vanilla extract
- 1/4 cup brown sugar, divided
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1 large carrot, finely grated
- 2 tablespoons pecans, chopped
Directions
- Preheat the oven to 350 degrees. Grease a 9x13” baking pan.
- Cut each waffle into 4 square pieces. Place them in the greased baking pan, slightly overlapping.
- Place the eggs, milk, vanilla, 2 tablespoons brown sugar, salt, cinnamon, and grated carrot in a mixing bowl and whisk together until well combined. Pour evenly over the waffle mixture.
- Let sit for 10 minutes. Sprinkle the remaining 2 tablespoons brown sugar and pecans over the top.
- Bake in the preheated oven for 20-25 minutes, or until golden brown on top.
- Cool slightly before serving.
- Serve slices of the bake with maple syrup and whipped cream on top.
