Ingredients

  • 6 Kodiak Buttermilk & Vanilla Thick and Fluffy Power Waffles, thawed
  • 6 large eggs
  • 1-1/2 cups whole milk 
  • 1 teaspoon vanilla extract
  • 1/4 cup brown sugar, divided
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon 
  • 1 large carrot, finely grated
  • 2 tablespoons pecans, chopped

Directions

  1. Preheat the oven to 350 degrees. Grease a 9x13” baking pan.
  2. Cut each waffle into 4 square pieces. Place them in the greased baking pan, slightly overlapping.
  3. Place the eggs, milk, vanilla, 2 tablespoons brown sugar, salt, cinnamon, and grated carrot in a mixing bowl and whisk together until well combined. Pour evenly over the waffle mixture. 
  4. Let sit for 10 minutes. Sprinkle the remaining 2 tablespoons brown sugar and pecans over the top.
  5. Bake in the preheated oven for 20-25 minutes, or until golden brown on top.
  6. Cool slightly before serving. 
  7. Serve slices of the bake with maple syrup and whipped cream on top.
