Ingredients

  • 2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 2 teaspoons baking powder 
  • 1/4 teaspoon garlic powder
  • 1/4 cup butter, cold, cubed
  • 1 jalapeño, seeded and diced
  • 1 cup cheddar cheese, shredded 
  • 1 cup water

Directions

  1. Preheat the oven to 400° F. Line a baking sheet with parchment paper.
  2. Place the Kodiak mix, baking powder, and garlic powder a mixing bowl. Whisk together.
  3. Add cold butter cubes to the dry ingredients and cut in with a pastry cutter or your fingers until the butter resembles coarse crumbs.
  4. Add the jalapeño and cheddar cheese and toss through the mixture to distribute evenly.
  5. Add the water and stir in to form a thick batter. Let sit for 10 minutes.
  6. Spoon the batter onto the prepared baking sheet in 1/4 cup increments, mounding in a circular shape. A scoop also works well. Space biscuits at least 2 inches apart.
  7. Bake in the preheated 10-12 minutes, or until cooked through.
  8. Cool slightly before serving. Store in an airtight container.
