They're a delicious combo of fall goodness, blending Kodiak® Pumpkin Power Cakes with Dark Chocolate Power Cakes®, with just a few additions like Greek yogurt, honey, and melted coconut to complete this scrumptious autumn treat. It’s the same classic cookie ingredients you crave, just in a better-for-you version that seriously tastes scary good.
Ingredients
- 2 cups of Kodiak Pumpkin Power Cakes Flapjack & Waffle Mix
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 2 tablespoons Greek yogurt
- 1/3 cup honey
- 1/4 cup melted coconut oil
In a separate bowl:
- 2 cups of Kodiak Dark Chocolate Power Cakes Flapjack and Waffle Mix
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 egg
- 2 tablespoons greek yogurt
- 1/3 cup honey
- 1/4 cup melted coconut oil
Directions
- Preheat oven to 350° F
- In a large bowl, combine Kodiak Pumpkin Power Cakes, baking soda, and salt
- Add in egg, yogurt, honey, and coconut oil
- Stir ingredients, and then fold in optional dark chocolate chips if you choose
- Set bowl aside, repeat steps 1-4 using Kodiak Dark Chocolate Power Cakes
- With a small cookie scoop, scoop up 3/4 of the scoop full with dark chocolate dough, and 3/4 of the scoop of pumpkin dough. Roll them together and place on a cookie sheet
- Bake 9-10 minute, makes a little over 2 dozen large cookies
Pro Tips: Cookies do not spread too much, you can lay them about an inch apart on baking sheet. And for a smaller batch, cut the recipe in half.
