
Dark Chocolate Pumpkin Cookies

Nothing says fall like pumpkin cookies fresh from the oven. Our Dark Chocolate Pumpkin Cookies Recipe makes healthy dark chocolate pumpkin cookies you can feel good about eating. The batter is made using Kodiak Cakes Pumpkin Flax Energy Cakes and Dark Chocolate Power Cakes Flapjack and Waffle Mix, while Greek yogurt, honey, and melted coconut to make each cookie a healthy, satisfying treat that also tastes amazing.
Ingredients
Ingredients:
2 cups of Kodiak Cakes Pumpkin Flax Mix
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
2 tablespoons greek yogurt
1/3 cup honey
1/4 cup melted coconut oil
optional* sprinkles or dark chocolate chips for pumpkin mix
In a separate bowl:
2 cups of Kodiak Cakes Dark Chocolate Flapjack and Waffle Mix
1/2 teaspoon baking soda
1/4 teaspoon salt
1 egg
2 tablespoons greek yogurt
1/3 cup honey
1/4 cup melted coconut oil
Directions
- Preheat oven to 350 degrees F
- In a large bowl, mix Kodiak Cakes Pumpkin Flax Mix, baking soda, and salt
- Add in egg, yogurt, honey, and coconut oil
- Stir ingredients, and then fold in dark chocolate chips (optional)
- Set bowl aside, repeat steps 1-4 using Dark Chocolate Kodiak Cakes Flapjack and Waffle mix
- Using small cookie scoop, scoop up ¾ full with Dark chocolate mix, and ¾ of the scoop of pumpkin mix. Roll together and place on cookie sheet
- Bake 9-10 minute, makes a little over 2 dozen large cookies
*Cookies do not spread too much, you can lay them about an inch apart on baking sheet. *Split recipe in half for smaller batch.
