Ingredients

  • 1 cup Kodiak Classic Rolled Oats Canister
  • 1-1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • Pinch of salt
  • 1 banana
  • 2 eggs
  • 1/2 cup cottage cheese
  • 1 teaspoon vanilla
  • 3 tablespoons milk

 

Optional Toppings:

  • Fresh berries
  • Butter
  • Maple Syrup

Directions

  1. Add the Kodiak oats, baking powder, cinnamon, and salt to a blender. Mix until it resembles a coarse flour. Pour into a bowl and set aside.
  2. Add the banana, eggs, cottage cheese, vanilla, and milk to the same blender. Blend until smooth.
  3. Add the dry ingredients back into the blender and mix until combined.
  4. Preheat a skillet or griddle to medium-high heat. Grease when ready to start cooking.
  5. Scoop about 1/4 cup of batter at a time onto the skillet and cook until bubbles start to form on top before flipping. Repeat with the remainder of the batter.
  6. Add your favorite toppings and enjoy!
