Ingredients

  • 4 packets Kodiak Chocolate Chip Oatmeal Packets
  • 1/3 cup Kodiak Pumpkin Power Cakes Flapjack & Waffle Mix
  • 1/4 cup chopped pecans
  • 1/4 teaspoon baking powder
  • 2 tablespoons maple syrup
  • 2 eggs
  • 3/4 cup milk
  • 1/2 cup pumpkin puree
  • 36 pecan halves

Directions

  1. Preheat the oven to 350° F. Coat a mini muffin tin with cooking spray or butter.
  2. Place the contents of the oatmeal packets in a mixing bowl along with the power cakes mix, chopped pecans, and baking powder. Whisk to combine.
  3. Add the maple syrup, eggs, milk, and pumpkin puree to the dry ingredients and whisk together to form a smooth batter. Let sit for 5 minutes to let the grains absorb the liquid.
  4. Stir again and fill each mini muffin tin 7/8 full with batter. This recipe should fill about 36 mini muffin tins. Top each muffin with a pecan half.
  5. Bake in the preheated oven for 12-15 minutes, or until golden brown on top and puffed.
  6. Remove and let cool for 10 minutes. Run a butter knife around the edge of each mini muffin and remove from the pan. Store in an airtight container.
