Ingredients
- 4 packets Kodiak Chocolate Chip Oatmeal Packets
- 1/3 cup Kodiak Pumpkin Power Cakes Flapjack & Waffle Mix
- 1/4 cup chopped pecans
- 1/4 teaspoon baking powder
- 2 tablespoons maple syrup
- 2 eggs
- 3/4 cup milk
- 1/2 cup pumpkin puree
- 36 pecan halves
Directions
- Preheat the oven to 350° F. Coat a mini muffin tin with cooking spray or butter.
- Place the contents of the oatmeal packets in a mixing bowl along with the power cakes mix, chopped pecans, and baking powder. Whisk to combine.
- Add the maple syrup, eggs, milk, and pumpkin puree to the dry ingredients and whisk together to form a smooth batter. Let sit for 5 minutes to let the grains absorb the liquid.
- Stir again and fill each mini muffin tin 7/8 full with batter. This recipe should fill about 36 mini muffin tins. Top each muffin with a pecan half.
- Bake in the preheated oven for 12-15 minutes, or until golden brown on top and puffed.
- Remove and let cool for 10 minutes. Run a butter knife around the edge of each mini muffin and remove from the pan. Store in an airtight container.
