White Chocolate Macadamia Nut Cookies are a tasty change of pace from the usual chocolate chip cookie. This recipe is even made with Kodiak Cakes All-Purpose Baking Mix to make each cookie a protein-packed, 100% whole grain treat. So, feel free to eat two or three of these white chocolate macadamia nut cookies.
Ingredients
- 1 cup stevia or sweetener of choice
- 1/2 teaspoon salt
- 2 teaspoons vanilla extract
- 1 cup white chocolate chips
- 3/4 cup chopped macadamia nuts
- 1 cup softened butter
- 2 large whole eggs
- 2-1/4 cups Kodiak Cakes All Purpose Baking Mix
- 1/2 teaspoon baking soda
Directions
- Preheat over to 375 degrees F. and line two large baking sheets with parchment paper
- In a medium size bowl, whisk together Kodiak Cakes mix, baking soda and salt then set aside
- In a large bowl or stand mixer combine sweetener, vanilla extract and butter. Mix on medium until light and fluffy for about 2 minutes. Add eggs one at a time and beat for about 30 seconds. Slowly fold in the flour mixture slowly until the flour begins to disappear. Fold in white chocolate chips and macadamia nuts
- Portion and divide cookie dough onto baking sheets. Bake for 11-14 minutes, or until golden brown at the edges but soft in the middle. Let cookies cool for 5 minutes on baking sheet before transferring to a wire rack to cool completely
