Ingredients
- 1 cup applesauce
- 2 eggs
- 1/2 cup avocado oil
- 1 teaspoon vanilla
- 1 3/4 cups Kodiak Cinnamon Oat Power Cakes Flapjack & Waffle Mix
- 1-1/2 teaspoons baking powder
- 1/4 cup Kodiak Classic Rolled Oats Oatmeal Canister
Directions
- Preheat the oven to 375° F. Line a muffin tin with paper liners.
- Place the applesauce, eggs, avocado oil, and vanilla in a mixing bowl and whisk together until smooth.
- In another bowl, whisk together the Kodiak mix and baking powder. Add to the wet ingredients and whisk together to make a smooth batter. Let rest for 10 minutes.
- Scoop the batter into the prepared muffin tins, filling each liner almost full.
- Sprinkle each liner with 1 teaspoon of the Kodiak oats.
- Bake in the preheated oven for 15-16 minutes. Or until puffed and golden brown on top.
- Remove from the oven and let cool.
- Store in an airtight container.
