Ingredients
- 2 boxes Kodiak Buttermilk Power Flapjacks
- 2 tablespoons olive oil
- 8 oz. Turkey bacon, chopped
- 1 small red onion, chopped
- 2 colored bell peppers, seeded and cored, chopped
- 1 tablespoon coarse-ground mustard
- 1 teaspoon salt
- 1/2 teaspoon coarse-ground pepper
- 6 large eggs
- 3 cups milk
- 2 cups cheddar cheese, shredded
- 4 green onions, sliced
Directions
- Thaw the flapjacks and remove from wrappers. Slice into cubes and lay out on a baking sheet.
- Place the flapjack cubes in the oven at 300° F for 10 minutes to dry them out.
- Place the flapjack cubes in a greased 9x13 baking dish.
- Heat the olive oil in a large skillet over medium-high heat. Add the turkey, bacon, onion, and bell pepper, and sauté for 3 to 4 minutes, or until vegetables are soft and bacon is fully cooked. Remove from heat and set aside.
- Place the mustard, salt, pepper, and eggs in a large mixing bowl and whisk together to form a smooth mixture. Set aside.
- Add the turkey bacon and sautéed vegetables to the flapjack cubes in the baking pan and toss to distribute evenly.
- Pour the egg mixture evenly over the flapjack mixture. Sprinkle half of the green onions over the top and reserve the remaining green onions for topping the dish after it has been baked.
- Sprinkle the shredded cheese over the top of the dish. Cover and refrigerate overnight.
- When ready to bake, preheat the oven to 350° F. Bake the dish for 45 to 50 minutes, or until the egg mixture is fully cooked in the center.
- Remove the dish from the oven and sprinkle the remaining green onions over the top. Slice into squares and serve!
