Ingredients

  • 1 packet Kodiak Dark Chocolate Sea Salt Overnight Oats
  • 1/4 teaspoon baking powder
  • 1 tablespoon maple syrup
  • 1/2 ripe banana, mashed
  • 1 large egg 
  • 1 tablespoon oil (avocado, light olive oil, etc)
  • 1 tablespoon milk
  • Chocolate chips (optional)

Directions

  1. Place the contents of the overnight oats packet and the baking powder in a large mug. Whisk together with a fork.
  2. Add the maple syrup, mashed banana, egg, oil, and milk, and stir in with a fork to form a smooth batter. Let sit for five minutes, then stir again.
  3. Sprinkle chocolate chips on top of the batter, if desired.
  4. Microwave the mug for 90 seconds.
  5. Sprinkle the top with coarse sea salt, if desired. Let cool slightly and enjoy!

 

*Pro Tip: Bake your mug cake in an oven preheated to 375° F for 12 to 15 minutes, or until puffed on top and cooked through.
