Ingredients
- 4 sausage patties or links
- 2 eggs
- 1 teaspoon olive oil
- 1/4 cup cherry tomatoes, halved
- 1/2 avocado, sliced
- 1 tablespoon green onion, sliced
- 6 Kodiak Buttermilk Power Flapjacks
- Salt and pepper, to taste
Directions
- Heat a skillet over medium-high heat and add the sausage patties. Cook on both sides until browned. Place in a bowl.
- In the same pan, fry the two eggs as desired. Place in bowl with sausage.
- In the same skillet, heat the olive oil and add the tomatoes. Sauté until blistered and add to the bowl with the eggs and sausage.
- Toast the flapjacks in a toaster according to package instructions and place in the bowl. Flapjacks can be left whole and used as wraps, or cut into pieces.
- Add the avocado and green onion to the bowl. Season with salt and pepper and enjoy!
