Ingredients

  • 4 sausage patties or links
  • 2 eggs
  • 1 teaspoon olive oil 
  • 1/4 cup cherry tomatoes, halved 
  • 1/2 avocado, sliced 
  • 1 tablespoon green onion, sliced 
  • 6 Kodiak Buttermilk Power Flapjacks
  • Salt and pepper, to taste 

Directions

  1. Heat a skillet over medium-high heat and add the sausage patties. Cook on both sides until browned. Place in a bowl.
  2. In the same pan, fry the two eggs as desired. Place in bowl with sausage.
  3. In the same skillet, heat the olive oil and add the tomatoes. Sauté until blistered and add to the bowl with the eggs and sausage.
  4. Toast the flapjacks in a toaster according to package instructions and place in the bowl. Flapjacks can be left whole and used as wraps, or cut into pieces.
  5. Add the avocado and green onion to the bowl. Season with salt and pepper and enjoy!
