These Apple Cinnamon & Oat Muffins make a hearty and irresistible batch of muffins that are as quick and easy to make as they are delicious. With fewer than 10 ingredients, including two Kodiak products, these muffins come together effortlessly for a better-for-you option that satisfies your cravings. Each bite offers a balance of hearty texture and natural sweetness, making them an excellent choice for breakfast, a quick snack, or even dessert!

Ingredients

  • 1 cup applesauce 
  • 2 eggs
  • 1/2 cup avocado oil 
  • 1 teaspoon vanilla 
  • 1 3/4 cups Kodiak Cinnamon Oat Power Cakes Flapjack & Waffle Mix
  • 1-1/2 teaspoons baking powder
  • 1/4 cup Kodiak Classic Rolled Oats Oatmeal Canister

Directions

  1. Preheat the oven to 375° F. Line a muffin tin with paper liners.
  2. Place the applesauce, eggs, avocado oil, and vanilla in a mixing bowl and whisk together until smooth.
  3. In another bowl, whisk together the Kodiak mix and baking powder. Add to the wet ingredients and whisk together to make a smooth batter. Let rest for 10 minutes.
  4. Scoop the batter into the prepared muffin tins, filling each liner almost full.
  5. Sprinkle each liner with 1 teaspoon of the Kodiak oats.
  6. Bake in the preheated oven for 15-16 minutes. Or until puffed and golden brown on top.
  7. Remove from the oven and let cool.
  8. Store in an airtight container.
