Ingredients

  • 1/2 large avocado
  • 3/4 cup whole milk
  • 1/4 teaspoon spirulina powder 
  • 1 cup Kodiak Blueberry Power Cakes Flapjack & Waffle Mix
  • Pure maple syrup, to top
  • Fresh blueberries, to top

Directions

  1. Place the avocado, milk, and spirulina in a blender and process until smooth.
  2. Place the Kodiak mix in a bowl. Add the avocado mixture and whisk together to form a smooth batter. Let rest for 5 minutes.
  3. Heat a frying pan to medium-high and grease.
  4. Place 1/4-cup scoops of batter on the hot pan and cook until bubbles form on top. Flip and cook for an additional 30 seconds. Repeat with the remaining batter.
  5. Serve pancakes topped with blueberries and maple syrup.
