Our Avocado Pancakes get their vibrant hue from smooth avocado and a dash of spirulina, giving this stack a nutrient-rich kick hidden behind a burst of blueberry flavor thanks to Kodiak Blueberry Power Cakes. They’re soft, fluffy, and bring 19g of protein to your plate! Top ‘em with fresh blueberries and a drizzle of maple syrup for a sweet finish that balances the earthy, creamy tones in the most perfect breakfast bite. Ingredients

  • 1/2 large avocado
  • 3/4 cup whole milk
  • 1/4 teaspoon spirulina powder 
  • 1 cup Kodiak Blueberry Power Cakes Flapjack & Waffle Mix
  • Pure maple syrup, to top
  • Fresh blueberries, to top

Directions

  1. Place the avocado, milk, and spirulina in a blender and process until smooth.
  2. Place the Kodiak mix in a bowl. Add the avocado mixture and whisk together to form a smooth batter. Let rest for 5 minutes.
  3. Heat a frying pan to medium-high and grease.
  4. Place 1/4-cup scoops of batter on the hot pan and cook until bubbles form on top. Flip and cook for an additional 30 seconds. Repeat with the remaining batter.
  5. Serve pancakes topped with blueberries and maple syrup.
