Ingredients
- 1/2 large avocado
- 3/4 cup whole milk
- 1/4 teaspoon spirulina powder
- 1 cup Kodiak Blueberry Power Cakes Flapjack & Waffle Mix
- Pure maple syrup, to top
- Fresh blueberries, to top
Directions
- Place the avocado, milk, and spirulina in a blender and process until smooth.
- Place the Kodiak mix in a bowl. Add the avocado mixture and whisk together to form a smooth batter. Let rest for 5 minutes.
- Heat a frying pan to medium-high and grease.
- Place 1/4-cup scoops of batter on the hot pan and cook until bubbles form on top. Flip and cook for an additional 30 seconds. Repeat with the remaining batter.
- Serve pancakes topped with blueberries and maple syrup.
