Ingredients
- 1 ripe banana
- 1 cup Kodiak Classic Rolled Oats Oatmeal Canister
- 2 large eggs
- 1/2 teaspoon cinnamon
- 1-1/4 teaspoon baking powder
- Pinch of salt
- 1 teaspoon vanilla extract
- 1-1/2 teaspoons maple syrup
Directions
- Add all ingredients to a blender and blend until smooth.
- Let sit for five minutes to allow oats to soak up the liquid.
- Grease a skillet with butter and heat to medium high.
- Pour about 1/4 cup of batter onto the skillet. Let cook until golden brown then flip and cook on the other side for 30 seconds. Repeat with remaining batter (makes 7-8 pancakes)
- Serve topped with butter, sliced bananas, and maple syrup.
