Give ‘em a lunch they won’t wanna trade. Our Bento Box recipe ft. Kodiak® Quick Mix is filled with all the good stuff your kids crave and nothing they don’t. Between thick turkey bites, sliced cheese, mini Kodiak pancakes, and their favorite fillers (we’re talkin’ pretzels, chocolate, fruits/veggies), this homemade lunch will keep both your student’s attention span and their taste buds happy.

Ingredients
- 1 bottle Kodiak Buttermilk Quick Mix Power Cakes
- 1 cup water
- 2 thick slices roasted turkey breast
- 4 slices cheddar cheese
- Additional lunch box fillers, such as trail mix, veggies, chips, treats, etc.
Directions
- Preheat a griddle over medium heat.
- Add water to Kodiak Quick Mix bottle, tighten the lid, and shake vigorously until mix is smooth and well combined.
- Squeeze mix onto the hot griddle to make mini pancake rounds. Cook until puffed and bubbly. Flip over and cook on the other side until golden brown. Repeat with the remaining batter.
- Place the pancake rounds into Bento Box compartments.*
- Slice the turkey and cheese into pieces that are about the same size as the waffles. Divide the turkey and cheese equally between Bento Boxes in separate compartments from the pancakes.
- Fill the remaining Bento box compartments with items of your choice. Keep refrigerated until ready to enjoy.
*Store leftover rounds in the refrigerator or freezer in an airtight container to use all week! We recommend preheating leftover mini pancakes before packing your Bento Box.
