Donuts don't always have to be a "guilty pleasure" with recipes like these strawberry glazed donut holes. Made using Kodiak® Carb-Conscious Flapjack & Waffle Mix, this recipe makes a lower carb option compared to what you might find at the local convenience store. And, you can satisfy your sweet tooth without all the added sugar.
Ingredients
Donut Holes:
- 1 -3/4 cup Kodiak Carb-Conscious Flapjack and Waffle Mix
- 3/4 cup buttermilk
- 1/4 cup oil
- 2 tablespoon sugar
- 1 egg
- 1 teaspoon vanilla extract
Glaze:
- 1-1/2 cups powdered sugar
- 1/2 cup chopped strawberries, puréed
Directions
- Preheat oven to 350° F and grease a mini muffin pan with oil
- In a large bowl, stir all ingredients together until combined, careful not to over mix
- Fill the mini muffin pan 3/4 full and bake for 10-15 minutes or until a toothpick comes out clean. Let cool completely
- Meanwhile, whisk the powdered sugar and strawberry pure together until smooth
- Dip the baked and cooled donut holes in the strawberry glaze to coat
- Let the glaze dry and harden
