Ingredients
- 1 box Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 1-1/2 cup cornmeal
- 2 teaspoons baking powder
- 1 teaspoon salt
- 1 cup cottage cheese
- 1-1/4 cup whole milk
- 1-1/4 cup apple sauce
- 3 eggs
- 1/4 cup melted butter
- 1/3 cup honey
Directions
- Preheat oven to 375°F and grease or line muffin tins.
- In a blender, combine cottage cheese, eggs, applesauce, milk, honey, and melted butter. Blend until completely smooth.
- In a large bowl, whisk together Kodiak mix, cornmeal, baking powder, and salt. Pour in the blended wet ingredients and stir until just combined.
- Let batter rest for 5 minutes, then divide evenly into 24 muffin cups. Depending on the size of your muffin tins, you may need to bake in batches.
- Bake for 16–21 minutes, until set and lightly golden. Let cool slightly before serving.
- Store in an airtight container in the refrigerator for up to 4-5 days.
Reheat Instructions: From the fridge, reheat in 350°F oven for 6-10 minutes until warmed through.
