Ingredients
- 1 cup Kodiak Dark Chocolate Power Cakes Flapjack & Waffle Mix
- 1 egg
- 3/4 cup whole milk
- 1/2 cup cherries (pitted and quartered)
- 1 cup plain Greek yogurt
- 1-2 tablespoons maple syrup
- Fresh cherries, to top
Directions
- Place the Kodiak mix, egg, and milk in a mixing bowl and whisk together to form a smooth batter.
- Fold in the cherries and let rest for five minutes.
- While the batter is resting, make the maple yogurt whip by whisking the Greek yogurt and your desired amount of maple syrup together in a small mixing bowl until smooth and well combined. Set aside.
- Grease the frying pan and place it over medium high heat.
- Place 1/4 cup-sized scoops of pancake batter onto the hot frying pan and spread into a circle. Let cook until bubbles form on the top of the pancake. Flip and cook for an additional 15 to 20 seconds, or until golden brown.
- Repeat with the remaining batter.
- Serve pancakes topped with 1/4 cup of the maple whip, fresh cherries, and a drizzle of more maple syrup (if desired).
