- 1/3 cup cottage cheese
- 2 eggs
- 1 tablespoon milk of choice
- 1/3 cup Kodiak Dark Chocolate Power Cakes Flapjack & Waffle Mix
- 1/3 cup Greek yogurt
- dollop of smooth peanut butter (optional)
- 1 teaspoon of maple syrup (optional)

Directions
- In a blender, combine cottage cheese, eggs, and milk. Blend until smooth.
- In a medium bowl, mix the cottage cheese mixture with the Kodiak mix until well combined.
- Scoop about a 1/4 cup of batter onto a preheated and greased skillet to make 3 pancakes.
- Allow to cook until bubbles form, then flip and finish cooking.
- Meanwhile, combine Greek yogurt, peanut butter, and maple syrup in a bowl until smooth.
