Ingredients

  • 1/3 cup cottage cheese
  • 2 eggs
  • 1 tablespoon milk of choice
  • 1/3 cup Kodiak Dark Chocolate Power Cakes Flapjack & Waffle Mix
  • 1/3 cup Greek yogurt 
  • dollop of smooth peanut butter (optional)
  • 1 teaspoon of maple syrup (optional)

 

Topping Ideas:

  • Sliced fruit (bananas or strawberries)
  • Maple Syrup 

Directions

  1. In a blender, combine cottage cheese, eggs, and milk. Blend until smooth.
  2. In a medium bowl, mix the cottage cheese mixture with the Kodiak mix until well combined.
  3. Scoop about a 1/4 cup of batter onto a preheated and greased skillet to make 3 pancakes.
  4. Allow to cook until bubbles form, then flip and finish cooking.
  5. Meanwhile, combine Greek yogurt, peanut butter, and maple syrup in a bowl until smooth.
  6. Layer the flapjacks with the peanut butter yogurt mixture and add desired toppings. Enjoy!
