Ingredients
- 2-3/4 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 2 cups low-fat cottage cheese
- 2 eggs
- 1-3/4 cups liquid egg whites
Optional toppings/mix-ins:
- Berries and maple syrup
- Turkey bacon and maple syrup
- Greek yogurt, berries, and syrup
Directions
- Preheat waffle iron according to manufacturer instructions and lightly grease with cooking spray.
- In a blender, combine cottage cheese, eggs, egg whites, and milk. Blend until smooth.
- Pour blended mixture into a large bowl. Add Kodiak mix and stir until just combined. Let batter rest for 5 minutes to thicken slightly.
- Scoop about 3/4 cup of batter into the preheated waffle iron and cook until golden and set. Cook slightly longer if needed to ensure the center is fully cooked. Because the batter has more moisture, look for less steam coming from the waffle iron as a sign they’re done, roughly 5 minutes.
- Serve immediately, or let cool completely before storing in an airtight container in the refrigerator for up to 4-5 days, or freeze for longer storage.
Reheat Instructions: Reheat in oven at 350° F until warmed through and lightly crisp. (~5-15 mins)
*Pro Tip: Don’t have a waffle iron? No problem! Cook your batter on the griddle as you would for flapjacks, just give them a slightly longer cook time to make sure they’re cooked all the way through. Let each side get a nice golden crisp before flipping.
