Ingredients
- 3 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 1 cup low fat cottage cheese
- 1-1/4 cups liquid egg whites
- 2 eggs
- 1 cup water
- 1/2 teaspoon salt
- 1 cup ground chicken sausage
- 2 tablespoon maple syrup
- Optional: top with extra chicken sausage
Directions
- Preheat oven to 375°F and grease a muffin tin.
- In a skillet over medium-heat, cook chicken sausage until browned. Add maple syrup halfway through cooking and stir to coat. Continue cooking until lightly caramelized, then set aside to cool slightly.
- In a blender, combine egg whites, eggs, and cottage cheese. Blend until smooth.
- Pour blended mixture into a large bowl and whisk in water. Add Kodiak mix and salt, stirring until just combined. Fold in the cooked sausage.
- Divide batter evenly into 24 muffin cups (2 bites per serving), filling each about halfway. Depending on the size of your muffin tin, you may need to bake in batches.
- Bake for 16–22 minutes, until set and lightly golden. Let cool slightly before serving.
- Store in an airtight container in the refrigerator for up to 4 days, or freeze for longer storage.
Reheat Instructions: From the fridge, microwave for 20-30 seconds or in a 300°F oven for 6-10 mins. Thaw in the fridge overnight if frozen and reheat as above, or microwave 45-60 seconds until hot.
