Ingredients

  • 3 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 1 cup low fat cottage cheese
  • 1-1/4  cups liquid egg whites
  • 2 eggs
  • 1 cup water
  • 1/2 teaspoon salt
  • 1 cup ground chicken sausage
  • 2 tablespoon maple syrup
  • Optional: top with extra chicken sausage

Directions

  1. Preheat oven to 375°F and grease a muffin tin.
  2. In a skillet over medium-heat, cook chicken sausage until browned. Add maple syrup halfway through cooking and stir to coat. Continue cooking until lightly caramelized, then set aside to cool slightly.
  3. In a blender, combine egg whites, eggs, and cottage cheese. Blend until smooth.
  4. Pour blended mixture into a large bowl and whisk in water. Add Kodiak mix and salt, stirring until just combined. Fold in the cooked sausage.
  5. Divide batter evenly into 24 muffin cups (2 bites per serving), filling each about halfway. Depending on the size of your muffin tin, you may need to bake in batches.
  6. Bake for 16–22 minutes, until set and lightly golden. Let cool slightly before serving.
  7. Store in an airtight container in the refrigerator for up to 4 days, or freeze for longer storage.

Reheat Instructions: From the fridge, microwave for 20-30 seconds or in a 300°F oven for 6-10 mins. Thaw in the fridge overnight if frozen and reheat as above, or microwave 45-60 seconds until hot.
