Mint Chocolate Brownies

Ingredients

  • 1-1/2 cups Kodiak Dark Chocolate Power Cakes Flapjack & Waffle Mix 
  • 1/2 cup brown sugar, packed
  • 2 eggs
  • 1/3 cup avocado oil 
  • 1/3 cup whole milk
  • 1 teaspoon vanilla extract 
  • 1/2 cup butter, softened 
  • 2 cups powdered sugar
  • 1 teaspoon mint extract
  • 1-2 drops green food coloring (optional)
  • 2 tablespoons milk 
  • 2/3 cup dark chocolate chips
  • 1/2 cup heavy whipping cream

Directions

  1. Preheat the oven to 350° F. Line an 8x8” baking pan with parchment paper.
  2. Add the Kodiak mix and brown sugar to a mixing bowl and whisk together.
  3. Whisk in the eggs, oil, milk, and vanilla until a smooth batter forms.
  4. Spoon the batter into the prepared pan and spread evenly across the pan (batter will be thick).
  5. Bake the brownies in the preheated oven for 20-25 minutes, or until a tester inserted into the center comes out clean.
  6. Remove from the oven and cool completely.
  7. Place the butter, 1/2 of the powdered sugar, mint extract, and food coloring (if using) in a mixing bowl. Beat together with an electric mixer until smooth. Add the remaining powdered sugar and the milk and beat again to form a smooth frosting.
  8. Spread the frosting evenly over the top of the brownies.
  9. Place the chocolate chips in a bowl. Heat the cream just to a simmer in a small saucepan over medium/high heat. Pour the cream over the chocolate and let sit for 2 minutes.
  10. Whisk mixture together until a smooth ganache forms (all chocolate chips should be fully melted).
  11. Let the ganache cool, then spread it evenly over the mint frosting. Place in the fridge until fully chilled.
  12. Cut the brownies into 12 even pieces. Store in an airtight container in the refrigerator.
