Ingredients
- 1-1/2 cups Kodiak Dark Chocolate Power Cakes Flapjack & Waffle Mix
- 1/2 cup brown sugar, packed
- 2 eggs
- 1/3 cup avocado oil
- 1/3 cup whole milk
- 1 teaspoon vanilla extract
- 1/2 cup butter, softened
- 2 cups powdered sugar
- 1 teaspoon mint extract
- 1-2 drops green food coloring (optional)
- 2 tablespoons milk
- 2/3 cup dark chocolate chips
- 1/2 cup heavy whipping cream
Directions
- Preheat the oven to 350° F. Line an 8x8” baking pan with parchment paper.
- Add the Kodiak mix and brown sugar to a mixing bowl and whisk together.
- Whisk in the eggs, oil, milk, and vanilla until a smooth batter forms.
- Spoon the batter into the prepared pan and spread evenly across the pan (batter will be thick).
- Bake the brownies in the preheated oven for 20-25 minutes, or until a tester inserted into the center comes out clean.
- Remove from the oven and cool completely.
- Place the butter, 1/2 of the powdered sugar, mint extract, and food coloring (if using) in a mixing bowl. Beat together with an electric mixer until smooth. Add the remaining powdered sugar and the milk and beat again to form a smooth frosting.
- Spread the frosting evenly over the top of the brownies.
- Place the chocolate chips in a bowl. Heat the cream just to a simmer in a small saucepan over medium/high heat. Pour the cream over the chocolate and let sit for 2 minutes.
- Whisk mixture together until a smooth ganache forms (all chocolate chips should be fully melted).
- Let the ganache cool, then spread it evenly over the mint frosting. Place in the fridge until fully chilled.
- Cut the brownies into 12 even pieces. Store in an airtight container in the refrigerator.
