Ingredients

  • 5 Kodiak Buttermilk & Vanilla Power Waffles, quartered 
  • 3 ripe peaches, pitted and sliced 
  • 4 large eggs
  • 1 cup whole milk 
  • 3/4 cup brown sugar, divided 
  • 1 teaspoon vanilla 
  • 1 cup Kodiak Classic Rolled Oats Oatmeal Canister
  • 4 tablespoons butter

Directions

  1. Preheat the oven to 350° F. Grease a 9x9” baking pan or pie dish.
  2. Layer the quartered waffles and sliced peaches along the bottom of the prepared pan.
  3. Place the eggs, milk, 1/2 cup of the brown sugar, and vanilla in a mixing bowl, and whisk together until smooth.
  4. Pour the liquid over the waffle and peach layers. Let sit for 30 minutes (or cover and store overnight and resume baking steps in the morning).
  5. Place the protein oatmeal, reserved 1/4 cup of brown sugar, and butter in a small mixing bowl and blend together with a pastry cutter until butter pieces are the size of small peas.
  6. Sprinkle the crumble mixture over the top of the waffle mixture.
  7. Bake in the preheated oven for 45 to 50 minutes, or until fully cooked in the center.
  8. Serve scoops of the waffle bake topped with whipped cream, or Greek yogurt, if desired.
