Powercake Banana Nut Muffins

Muffins are a great way to fuel for any adventure, and these whole grain, protein-packed, banana nut muffins will do just that. Warm out of the oven, these delicious baked goods help jumpstart your morning with the nutrients you need. Have a big day on the trail? Grab a different pan and make them jumbo! Or, if you're just tackling school lunches, why not try making them as mini-muffins?

Ingredients

  • 2 cups Kodiak Cakes Buttermilk Powercakes Flapjack and Waffle mix
  • 3/4 cup milk of choice
  • 1/2 cup brown sugar
  • 1/2 cup walnuts, chopped
  • 1/4 cup butter, melted
  • 2 bananas, mashed
  • 1 egg
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla

Directions

  1. Preheat oven to 350° F.
  2. Combine all ingredients in a mixing bowl and blend until smooth
  3. Fill greased muffins cups 3/4 full
  4. Bake at 350 degrees for 16-18 minutes, or until tops are golden and inserted toothpick comes out slightly moist
Notes: For Blueberry Yogurt Muffins, substitute 1/2 cup Greek yogurt for the bananas and add 1/2 cup fresh or frozen blueberries
