These Pumpkin Cheesecake Muffins are an excellent breakfast choice to eat before any adventure. Whether that means rafting whitewater, repelling down cliffs, or maybe just tackling a big to-do list these muffins are packed with the nutrition you need. Make a big batch of mini muffins to share with your adventure buddies or just a few jumbos to keep you going all week. Store any extras in an airtight container up to five days.

Ingredients

  • 2-1/2 cups whole wheat flour
  • 1-1/2 teaspoons Baking Soda
  • 1-1/2 teaspoons Baking Powder
  • 1 teaspoon Salt
  • 2 teaspoons Cinnamon
  • 1/4 teaspoon Ground Cloves
  • 1/4 teaspoon Ground Nutmeg
  • 1/2 cup Vegetable Oil
  • 1 cup Pumpkin Puree
  • 1 cup Sugar
  • 2 Eggs
  • 1 teaspoon Vanilla
  • 1 cup Milk
  • 9 tablespoons Mascarpone
  • 1 cup Kodiak Cakes Cinnamon Bear Bites
  • 4 tablespoons Butter, melted
*Makes 9 large or 18 regular sized muffins

Directions

  1. Preheat the oven to 350 degrees
  2. Grease 9 jumbo sized muffin tin wells, or 18 standard sized wells
  3. Add the flour, baking soda, baking powder, salt, cinnamon, cloves, and nutmeg to a mixing bowl and whisk together. Set aside
  4. In another bowl, whisk together the oil, pumpkin, eggs, sugar, vanilla, and milk until smooth. Add dry ingredients to the wet ingredients and whisk until just combined
  5. Place the bear bites in a bowl and pour melted butter over the top. Use a pastry cutter to smash the cookies together with the butter until they break down into pea sized crumbles. Set aside
  6. Fill each muffin well 2⁄3 full with batter. Spoon 1 tablespoon of mascarpone on top of the batter in each well(use 1⁄2 tablespoon per well if making standard sized muffins). Divide the rest of the batter evenly between the wells, covering the mascarpone. Each tin should be a heaping 3⁄4 of the way full. Sprinkle the bear bite streusel over the tops of each well, dividing evenly
  7. Bake in preheated oven for 20-25 minutes for jumbo muffins, and 13-17 minutes for standard sized. Muffins are done with puffed and tops are firm to the touch
  8. Store in an airtight container
