Roasted Strawberry Yogurt Parfait

Ingredients

  • 2 cups strawberries, stems removed, quartered 
  • 2 tablespoons honey
  • 1/2 teaspoon vanilla extract
  • Juice of half a lemon
  • 1/2 cup plain or vanilla Greek yogurt
  • 1/2 cup Kodiak Honey Oat Granola

Directions

  1. Preheat the oven to 350° F. 
  2. Place the strawberries, honey, vanilla, and lemon juice in a 9x13” baking dish and toss to combine.
  3. Bake in the preheated oven for 30 minutes, or until berries have released their juices and are deep red in color.
  4. Let cool completely. The juices will thicken to a syrup texture.
  5. To make a parfait, layer the yogurt, Kodiak granola, and roasted strawberries with syrup in small glass containers in desired volume.
  6. Cover and refrigerate any remaining strawberries in syrup.
