Slow Cooker BBQ Pulled Pork Waffle Sandwich

Pull out the old crockpot, because you're going to love this slow cooker bbq pulled pork sandwich recipe. This sandwich takes tender, pulled pork shoulder, slathers it in your favorite BBQ sauce, tops it with coleslaw, and then swaps out bland store-bought buns for two hot, crispy, Kodiak Thick & Fluffy Power Waffles. These bigger, better, toaster ready waffles were made for holding together extra-hearty meals like this one. So, grab the napkins and dig in!
Ingredients
- 2 cloves garlic, chopped
- 1 small onion, quartered
- 1/4 cup chicken broth or water
- 1 tablespoon brown sugar
- 1 tablespoon salt
- 1 teaspoon paprika
- 3 lbs. pork shoulder
- 1 cup BBQ sauce
- 8 Kodiak Buttermilk & Vanilla Thick & Fluffy Power Waffles
- 1 cup coleslaw
- 4 pickles
Directions
- Place garlic and onions in the bottom of a slow cooker
- Pour the broth or water over the onions
- Combine the brown sugar, salt, and paprika in a small bowl
- Rub the spice mixture over the pork and place over the garlic and onions in the slow cooker
- Cover and cook on low for 8-10 hours
- Turn off the slow cooker, remove the pork shoulder, and place it on a cutting board
- Strain the liquid from the slow cooker to discard
- Use two forks to shred the pork. Then, return the shredded meat to the slow cooker
- Stir the BBQ sauce into the pulled pork to coat
- Microwave Kodiak waffles for 30 seconds. Then, toast on the lowest setting until hot and crispy throughout
- Place the BBQ pulled pork and 1/4 cup coleslaw between two waffles. Repeat with remaining sandwiches
- Serve with a pickle
*To speed up cook time, cook the pork on high for 6-8 hours.
