Ingredients

  • 2 cloves garlic, chopped
  • 1 small onion, quartered
  • 1/4 cup chicken broth or water
  • 1 tablespoon brown sugar
  • 1 tablespoon salt
  • 1 teaspoon paprika
  • 3 lbs. pork shoulder
  • 1 cup BBQ sauce
  • 8 Kodiak Buttermilk & Vanilla Thick & Fluffy Power Waffles
  • 1 cup coleslaw
  • 4 pickles

Directions

  1. Place garlic and onions in the bottom of a slow cooker
  2. Pour the broth or water over the onions
  3. Combine the brown sugar, salt, and paprika in a small bowl
  4. Rub the spice mixture over the pork and place over the garlic and onions in the slow cooker
  5. Cover and cook on low for 8-10 hours
  6. Turn off the slow cooker, remove the pork shoulder, and place it on a cutting board
  7. Strain the liquid from the slow cooker to discard
  8. Use two forks to shred the pork. Then, return the shredded meat to the slow cooker
  9. Stir the BBQ sauce into the pulled pork to coat
  10. Microwave Kodiak waffles for 30 seconds. Then, toast on the lowest setting until hot and crispy throughout
  11. Place the BBQ pulled pork and 1/4 cup coleslaw between two waffles. Repeat with remaining sandwiches
  12. Serve with a pickle

  *To speed up cook time, cook the pork on high for 6-8 hours.
