Ingredients

  • 4 Kodiak Homestyle Power Waffles (frozen)
  • 4 slices deli ham
  • 4 eggs

 

Simple Hollandaise Sauce:

  • 3 egg yolks
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 2 tablespoons butter, melted and warm

 

Topping:

  • Fresh chives or dill

Directions

  1. Toast the Kodiak waffles according to package directions until golden and crisp.
  2. Place the ham slices in a skillet over medium heat. Cook for 1-2 minutes per side until lightly browned around the edges.
  3. Fill a saucepan with a few inches of water and bring to a gentle simmer. Crack each egg into a small bowl and carefully slide into the simmering water. Cook for 3-4 minutes, or until the whites are set and the yolks remain soft. Remove with a slotted spoon.
  4. While the eggs are cooking, prepare the hollandaise sauce. Place the egg yolks, lemon juice, and salt in a blender or small food processor. Blend until smooth.
  5. Slowly drizzle in the warm melted butter while blending until the sauce becomes thick and creamy.
  6. Place two waffles on each plate. Top each waffle with grilled ham, a poached egg, and spoon the hollandaise sauce over the top.
  7. Finish with fresh chives or dill and serve immediately.
