Ingredients
- 4 Kodiak Homestyle Power Waffles (frozen)
- 4 slices deli ham
- 4 eggs
Simple Hollandaise Sauce:
- 3 egg yolks
- 1 tablespoon lemon juice
- 1/4 teaspoon salt
- 2 tablespoons butter, melted and warm
Topping:
- Fresh chives or dill
Directions
- Toast the Kodiak waffles according to package directions until golden and crisp.
- Place the ham slices in a skillet over medium heat. Cook for 1-2 minutes per side until lightly browned around the edges.
- Fill a saucepan with a few inches of water and bring to a gentle simmer. Crack each egg into a small bowl and carefully slide into the simmering water. Cook for 3-4 minutes, or until the whites are set and the yolks remain soft. Remove with a slotted spoon.
- While the eggs are cooking, prepare the hollandaise sauce. Place the egg yolks, lemon juice, and salt in a blender or small food processor. Blend until smooth.
- Slowly drizzle in the warm melted butter while blending until the sauce becomes thick and creamy.
- Place two waffles on each plate. Top each waffle with grilled ham, a poached egg, and spoon the hollandaise sauce over the top.
- Finish with fresh chives or dill and serve immediately.
