Ingredients

Stew:

  • 2 tablespoons olive oil 
  • 2 pounds beef stew meat (cut into 1” pieces)
  • 1/4 cup Kodiak Buttermilk & Honey Frontier Cakes Flapjack & Waffle Mix
  • 2 tablespoons tomato paste
  • 1 cup dry red wine
  • 4 large carrots, peeled and cut into ½” pieces 
  • 1 yellow onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • 6 cups beef broth
  • Salt and pepper, to taste

 

Buttermilk Dumplings:

  • 1 cup Kodiak Buttermilk & Honey Frontier Cakes Flapjack & Waffle Mix
  • 1 teaspoon baking powder
  • 1/4 teaspoon garlic powder 
  • 1 teaspoon fresh thyme, chopped
  • 1/2 cup whole milk
  • 2 tablespoon butter, melted
     

Directions

  1. Preheat the oven to 325 degrees Fahrenheit. Add the olive oil to a Dutch oven and heat on high.
  2. Add the beef and cook in the hot oil, stirring occasionally, until meat is browned on all sides.
  3. Reduce the heat to medium. Add the frontier cakes mix and toss to coat the beef. Continue to cook for 1 minute, stirring occasionally.
  4. Add the tomato paste and cook an additional 20 seconds. Pour in the red wine and stir, cooking until a thick mixture develops to coat the beef.
  5. Add the carrots, onion, garlic, thyme, and beef broth to the mixture. Stir and bring to a boil. Taste and add salt and pepper as needed.
  6. Once the mixture is boiling, remove from heat. Add a lid (oven proof) and place in the preheated oven. Cook for 1 hour.

 

Once the stew has been cooking for 1 hour, make and add the dumplings: 

  1. Place the Kodiak mix in a mixing bowl along with the baking powder, garlic powder, and thyme. Whisk together.
  2. Add the milk and melted butter to the dry ingredients and stir in until just combined. Let the mixture sit for 5 minutes to thicken.
  3. Remove the stew from the oven and carefully remove lid. Spoon the dumpling batter into heaps evenly distributed across the top of the stew.
  4. Replace the lid and place the stew back in the oven. Cook for an additional 10 minutes or until dumplings are cooked through.
