Ingredients

Cinnamon Cookie Crust:

  • 1-1/4 cup unsalted grass-fed, organic butter, softened (not melted)
  • 2-1/2 cups Kodiak Cakes Protein Packed Cinnamon Oat Flapjack and Waffle Mix
  • 1 cup maple syrup
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cups Kodiak Cakes Cinnamon Oat Power Cakes Flapjack and Waffle Mix
  • 1-1/2 teaspoon baking soda
  • 3 cups oats

Frosting:

  • 8 oz. original cream cheese
  • 2 tablespoon granulated stevia
  • 2 tablespoon coconut milk
  • 1 teaspoon vanilla

Topping:

  • All the fruit! (kiwis, strawberries, raspberries, blueberries, cherries, etc.)

DIRECTIONS

  1. Preheat oven to 350 degrees.
  2. In the bowl of a standing mixer, combine butter, maple syrup, egg, and vanilla. Mix until just combined. Add Kodiak Cakes mix, baking soda, and oats. Mix until incorporated.
  3. Grease a pizza stone with coconut oil. Place dough in the middle of the pizza stone and press into it, forming a flattened circle. Leave about 1-1/2 inches around the edge as batter will expand as it cooks. *If the batter begins to overflow from the pan while baking, simply trim the edges of the cookie off and continue baking.
  4. Bake for 12-15 minutes*, until the cookie crust is golden brown. Allow to cool completely (it will continue to bake and harden as it cools).
  5. While crust is cooling, make frosting: combine all ingredients in the bowl of a standing mixer and beat until a fluffy frosting forms.
  6. Spread frosting on cookie crust and top with sliced fresh fruit. Place in fridge for at least 1 hour to chill.
  7. Serve chilled.

*Notes: If using a metal pan instead of a cookie sheet, bake time may be longer.
