It’s that time of year when your garden will—if it hasn’t already—begin to produce what seems like endless amounts of zucchini and fruit trees will start to sag with everything from peaches and cherries to apricots and pears. And before you know it, you’ll have more fresh fruit and vegetables than you’ll know what to do with! As good as those first few batches of fresh fruit and veggies are, though, it can start to feel like a second job trying to make sure they all don’t go to waste.

We love to find delicious ways to incorporate seasonal fruit and vegetables into our diet every day. So, to help you get creative with your harvest this year, we’ve come up with five must-try waffle topping ideas to pair with our toaster-ready Power Waffles using some summer fruit and vegetables. And for those of you without a garden or fruit trees, head on over to your local grocery store or farmers’ market; they are sure to have all the seasonal ingredients you’ll need to give these waffle toppings a try!


If there’s one fruit you don’t want to miss out on when it’s in season, it’s peaches. And while few things are as good as a peach picked right off the tree, putting fresh peaches on top of our Buttermilk & Vanilla Power Waffles come in as a close second—especially when you throw those peaches on the grill and add a bit of yogurt, honey, nutmeg, and mint. If you’ve never grilled peaches before, it’s easier than you’re probably thinking.

You’ll first want to set your grill or stovetop to medium-high heat. As your grill heats, cut the peaches you plan to grill in half or in slices and remove the pits. Brush maple syrup on each open side of the peach, as well as some olive oil on the grill to help prevent the peaches from sticking. Grill each side of the peach for no more than four to five minutes. As your peaches are grilling, put a few Power Waffles in the toaster so everything is ready to serve when the peaches are grilled and ready to go! Don’t want to take the time to heat up the grill? This recipe is just as tasty when served with uncooked slices of fresh peaches, but we’ll leave it to you decide which option you think tastes best.


If you’re a fan of breakfast for dinner, try topping our Homestyle Power Waffles with a few thick slices of fresh tomatoes, a bit of basil, a fried egg, splash of olive oil, and dash of sea salt. Part of what makes this topping combination so great is it turns a simple dinner recipe into a Mediterranean-inspired meal that tastes like it requires way more effort than it actually does. Don’t feel like this savory waffle topping combination can only be enjoyed at dinner time, though, because it makes a great lunch or even an afternoon snack (albeit a very filling one).

We usually cook our eggs over easy, but the egg tastes great poached or even scrambled with this combination of toppings. From there, all you have to do is slice a few tomatoes as thick as you like them, top them with fresh basil, then season to taste with a combination of crushed black pepper and sea salt for a filling meal or snack that’s as delicious as it sounds!


Fresh figs and raspberries may seem like an unlikely combination, but we’ve found they taste great on top of our Cinnamon Power Waffles. The best part about this combination of waffle toppings is it’s simple and convenient to prepare, resulting in a nourishing and wholesome breakfast perfect for those mornings you’re in a rush. Simply rinse a few figs and handful of raspberries, remove the stem from each fig and slice them as thin (or thick) as you prefer. And, since this combination of waffle toppings tastes great without maple syrup, it’s a great option if you’re trying to reduce the amount of sugar in your diet.


Whether your garden is producing more squash, zucchini, and cherry tomatoes than you know what do with, or you neighbor keeps bringing sacks of veggies to your door, don’t fret because this trio makes for a fantastic topping combo. As you prep, begin by preheating your oven to 400 degrees before lining a baking sheet with thin slices of zucchini and yellow squash. Once the zucchini and squash are finished cooking, top them on your waffles with sliced cherry tomatoes and finish with sea salt, basil pesto, and cracked pepper for a simple, wholesome, and filling dinner or lunch that makes the most of these classic summer vegetables.
