Ingredients

  • 1 Kodiak Blueberry Muffin Power Cup
  • 1/4 teaspoon baking powder
  • 2 teaspoons ground flaxseed
  • 1 egg
  • 1/4 cup water 
  • 1 tablespoon avocado oil

Directions

  1. Remove the lid to the Kodiak cup.
  2. Add the baking powder and flax. Stir with a fork to combine.
  3. Add the egg, water and avocado oil to the cup and stir to form a smooth batter. Top with fresh or frozen blueberries, if desired.
  4. Microwave on high for 90 seconds. Cool slightly before enjoying!

 

*Note: Muffins can also be baked directly in the paper cup in an oven preheated to 350° F for 12-15 minutes or until puffed and golden on top.
