Ingredients
- 1 Kodiak Blueberry Muffin Power Cup
- 1/4 teaspoon baking powder
- 2 teaspoons ground flaxseed
- 1 egg
- 1/4 cup water
- 1 tablespoon avocado oil
Directions
- Remove the lid to the Kodiak cup.
- Add the baking powder and flax. Stir with a fork to combine.
- Add the egg, water and avocado oil to the cup and stir to form a smooth batter. Top with fresh or frozen blueberries, if desired.
- Microwave on high for 90 seconds. Cool slightly before enjoying!
*Note: Muffins can also be baked directly in the paper cup in an oven preheated to 350° F for 12-15 minutes or until puffed and golden on top.
