Warm, savory, and made with our Original Oat and Honey Frontier Cakes Flapjack and Waffle Mix, this Breakfast Casserole Recipe will quickly become a breakfast and brunch staple in your home. Not only does this breakfast casserole with bacon recipe taste amazing, but it only requires 30 minutes of prep time, 45 minutes of baking, and it’s ready to serve with a side of fresh salsa from the garden or a dollop of sour cream!

Ingredients

  • 3 cups frozen hash browns
  • 1/4 cup butter
  • 1/2 pound bacon
  • 1 small yellow onion
  • 1 red pepper
  • 8 eggs
  • 1 cup milk
  • 1 cup Kodiak Cakes Original Oat and Honey Frontier Cakes Flapjack and Waffle Mix
  • 2 cups cheddar jack cheese
  • 1 packed cup spinach
  • Salt and pepper

Directions

  1. Preheat oven to 350 degrees.
  2. Spread hash browns in bottom of 9x13 pan.
  3. Melt butter and drizzle over hash browns. Bake 15 minutes.
  4. Chop onion and pepper.
  5. Cook bacon in pan. When almost cooked through, add onion and pepper and sauté. Drain and pat with paper towel.
  6. In large bowl, whip eggs with milk and add Kodiak Cakes mix and cheese. Stir to blend.
  7. Add salt and pepper, spinach and bacon mixture. Blend well.
  8. Pour mixture over hash browns and bake 30 minutes.
