Ingredients

  • 1 cup Kodiak Dark Chocolate Power Cakes Flapjack & Waffle Mix
  • 1 egg 
  • 3/4 cup whole milk 
  • 1/2 cup cherries (pitted and quartered)
  • 1 cup plain Greek yogurt
  • 1-2 tablespoons maple syrup
  • Fresh cherries, to top

Directions

  1. Place the Kodiak mix, egg, and milk in a mixing bowl and whisk together to form a smooth batter.
  2. Fold in the cherries and let rest for five minutes.
  3. While the batter is resting, make the maple yogurt whip by whisking the Greek yogurt and your desired amount of maple syrup together in a small mixing bowl until smooth and well combined. Set aside.
  4. Grease the frying pan and place it over medium high heat.
  5. Place 1/4 cup-sized scoops of pancake batter onto the hot frying pan and spread into a circle. Let cook until bubbles form on the top of the pancake. Flip and cook for an additional 15 to 20 seconds, or until golden brown.
  6. Repeat with the remaining batter.
  7. Serve pancakes topped with 1/4 cup of the maple whip, fresh cherries, and a drizzle of more maple syrup (if desired).
