Ingredients
- 1 box Kodiak Cakes Double Dark Chocolate Muffin mix
- 1-1/4 cup milk of choice
- 2 large whole eggs
- 1/4 cup coconut sugar
- 1/3 cup canned pumpkin
- 3/4 teaspoon pumpkin pie spice mix
- 1 teaspoon cinnamon
- 1/4 cup almond butter (frosting)
- 3 tablespoons canned pumpkin (frosting)
- 2 tablespoons coconut sugar or sweetener of choice (frosting)
Directions
- Preheat oven to 375 degrees F. and coat a mini muffin pan with non-stick spray, butter or coconut oil
- Add all ingredients to a large bowl or stand mixer. Mix on high until smooth. Divide and portion batter into muffin pan
- Bake for 15-20 minutes until a toothpick comes out clean when pokes through the center of muffin. Let cool completely
- Prepare frosting by adding almond butter, pumpkin and sweetener in a small bowl. Mix until smooth and well combined. Add a dollop to each muffin and sprinkle with additional pumpkin spice if desired
