All you need is a box of Kodiak Cakes Double Dark Chocolate Muffin Mix, canned pumpkin, and a few typical baking ingredients. We especially love this fall-infused recipe because it takes less than thirty minutes to give each muffin four grams of protein per serving, making each of these double chocolate pumpkin mini muffins a nourishing, great-tasting snack the whole family will enjoy.

Ingredients

  • 1 box Kodiak Cakes Double Dark Chocolate Muffin mix
  • 1-1/4 cup milk of choice
  • 2 large whole eggs
  • 1/4 cup coconut sugar
  • 1/3 cup canned pumpkin
  • 3/4 teaspoon pumpkin pie spice mix
  • 1 teaspoon cinnamon
  • 1/4 cup almond butter (frosting)
  • 3 tablespoons canned pumpkin (frosting)
  • 2 tablespoons coconut sugar or sweetener of choice (frosting)

Directions

  1. Preheat oven to 375 degrees F. and coat a mini muffin pan with non-stick spray, butter or coconut oil
  2. Add all ingredients to a large bowl or stand mixer. Mix on high until smooth. Divide and portion batter into muffin pan
  3. Bake for 15-20 minutes until a toothpick comes out clean when pokes through the center of muffin. Let cool completely
  4. Prepare frosting by adding almond butter, pumpkin and sweetener in a small bowl. Mix until smooth and well combined. Add a dollop to each muffin and sprinkle with additional pumpkin spice if desired
