Looking for a fun, festive fall snack? Our Double Chocolate Pumpkin Mini Muffins are just the ticket! All you need is a box of Kodiak Cakes Double Dark Chocolate Muffin Mix, canned pumpkin, and a few typical baking ingredients. We especially love this fall-infused recipe because it takes less than thirty minutes to give each muffin four grams of protein per serving, making each of these double chocolate pumpkin mini muffins a nourishing, great-tasting snack the whole family will enjoy.

  1. Preheat oven to 375 degrees F. and coat a mini muffin pan with non-stick spray, butter or coconut oil
  2. Add all ingredients to a large bowl or stand mixer. Mix on high until smooth. Divide and portion batter into muffin pan
  3. Bake for 15-20 minutes until a toothpick comes out clean when pokes through the center of muffin. Let cool completely
