- 1 egg
- 1/2 cup milk, warm
- 3 tablespoon. butter, melted
- 2 tablespoon sugar
- 1/4 cup brown sugar
- 1 tablespoon ground cinnamon
- 2 tablespoon butter, softened
- 2 oz. cream cheese, softened
- 1 tablespoon butter, softened
- 1/2 cup powdered sugar
- 1 tablespoon milk
- 1/4 tsp vanilla
Directions
- Grease an 8x8 pan with butter, set aside
- In a large bowl, combine the Kodiak Cakes Gluten Free Flapjack and Waffle mix and instant yeast
- In a separate bowl, whisk the egg, warm milk, melted butter, and sugar
- Add the wet ingredients to the dry and mix until a dough has formed
- Cover the dough with a damp towel or plastic wrap and let rise for 1 hour
- Meanwhile, combine the brown sugar and ground cinnamon to make cinnamon sugar
- Once an hour has passed, roll the dough into a 1/4â thick rectangle shape, between two sheets of parchment paper
- Spread the softened butter over the rolled dough. Sprinkle the cinnamon sugar evenly over the dough and gently press it into the butter
- Roll the dough into a log and cut into 8 rolls. Place into the prepared pan and cover
- Rest the dough for 1-2 hours or refrigerate overnight. (If refrigerating, remove the dough from the fridge 1-2 hours before baking)
- Preheat oven to 375°F
- Bake the cinnamon rolls for 14-18 minutes or until golden
- While the cinnamon rolls are baking, make the icing by using an electric mixer to beat the cream cheese and butter until light and fluffy
- Add the powdered sugar and continue mixing until smooth
- Mix in the milk and vanilla
- Spread icing over the slightly warm cinnamon rolls
