Really brighten up your breakfast with these Lemon Poppy Seed Flapjacks! Adding fresh lemon zest is sure to add zip to any food, but this recipe pairs that sour citrus with delicious poppy seeds straight into the batter. Top it all off with Greek yogurt, more zest, and another sprinkle of poppy seeds — it's tart, it's bright, it's your new favorite breakfast.


  • 1 cup Kodiak® Buttermilk Power Cakes Flapjack & Waffle Mix
  • 3/4 cup water
  • 2 tablespoons lemon zest
  • 1 tablespoon lemon juice
  • 1 teaspoon poppy seeds
  • 1/2 cup Greek Yogurt
  • Extra lemon zest for topping
  • Extra poppy seeds for topping


  1. Stir Kodiak mix, water, lemon zest, lemon juice, and poppy seeds until the batter is combined
  2. Pour 1/4 cup of batter onto a heated and greased pan or griddle. Cook on medium-high heat, or 375° F, until bubbles form on the top
  3. Flip and continue to cook until golden brown
  4. Top flapjacks with Greek Yogurt, lemon zest, and poppy seeds
