This Lemon Poppy Seed Pancake recipe is an easy and delicious way to add some extra flavor to your pancakes. It uses Kodiak Cakes Power Cakes Almond Poppy Seed Flapjack and Waffle Mix to give each flapjack the wholesome flavor of 100% whole grains and all-natural ingredients.

Ingredients

  • 1 cup Kodiak Cakes Almond Poppy Seed Flapjack mix
  • 2 tablespoon granulated sweetener of choice
  • 1/2 cup buttermilk or milk of choice
  • 3/4 cup greek yogurt
  • 1 large whole egg
  • 1/4 cup lemon juice
  • 1 tablespoon lemon zest

Directions

  1. Add ingredients to a large bowl and whisk well until batter is smooth. Let batter sit for 5 minutes
  2. Preheat pan or griddle and coat with non-stick spray, butter or coconut oil. Divide and pour batter. Cook 2-3 minutes on first side, flip and cook an additional minute until both sides are golden brown. Serve with maple syrup
