Ingredients

  • 3/4 cup whole milk
  • 3 tablespoons butter
  • 2-1/4 teaspoons instant yeast
  • 2-1/2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 egg, room temperature
  • 1 cup powdered sugar
  • 1 tablespoon maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon milk
  • 5 tablespoons cooked bacon, chopped

Directions

  1. Place the Kodiak mix, sugar, and salt in a mixing bowl fitted to a stand mixer and set aside.
  2. Place the milk and 3 tablespoons of the butter in a small saucepan and heat just until the butter starts to melt. Remove from heat, stirring occasionally until butter melts fully and let cool until warm (no longer hot to the touch). Add the yeast and whisk until dissolved.
  3. Pour the milk mixture into the bowl of dry ingredients along with the egg and stir to combine. Beat with whisk attachment for 5 minutes, to form a smooth dough.
  4. Cover and let rest for 10 minutes.
  5. Place the dough on a floured surface. Roll to a thickness of 3/4”. Cut donut shapes out of the dough and place on a parchment lined baking sheet.
  6. Cover the sheet with a cloth or plastic wrap and let donuts rise for about 1 hour or until doubled in size.
  7. Bake donuts at 350° for 11 to 12 minutes, or until cooked through.
  8. Remove from oven and let cool.
  9. Place the powdered sugar, maple syrup, vanilla, and milk in a mixing bowl and whisk until smooth. Add more milk if needed to achieve a thick glaze that drizzles from the whisk in ribbons.
  10. Dip the cooled donuts in the glaze and place on a wire rack. Sprinkle the tops of the donuts with bacon crumbles, about 1/2 tablespoon per donut.
  11. Store in an airtight container.
