Ingredients
- 1/2 cup (8 tablespoons) butter, melted and cooled
- 1/4 cup brown sugar, packed
- 1/3 cup molasses
- 1 egg
- 2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 1 teaspoon baking soda
- 1-1/2 teaspoons ground ginger
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/4 cup granulated sugar
Directions
- Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
- Combine the butter, brown sugar, and molasses in a mixing bowl. Whisk in the egg to form a smooth mixture.
- In another mixing bowl, whisk together the Kodiak mix, baking soda, ginger, cinnamon, and cloves.
- Add the dry ingredients to the wet ingredients and stir to form a smooth dough (careful not to overmix). Let sit for 10 minutes to allow grains time to absorb liquids.
- Divide the dough into 18 pieces and roll into balls. Roll each ball into the granulated sugar and place on the baking sheet, 2 inches apart.
- Bake in the preheated oven for 10 to 12 minutes, or until the tops are crinkled and just firm. Cool the cookies completely on wire racks.
- Store in an airtight container.
