Ingredients

  • 1/2 cup (8 tablespoons) butter, melted and cooled
  • 1/4 cup brown sugar, packed 
  • 1/3 cup molasses
  • 1 egg
  • 2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 1 teaspoon baking soda 
  • 1-1/2 teaspoons ground ginger 
  • 1 teaspoon cinnamon 
  • 1/2 teaspoon cloves
  • 1/4 cup granulated sugar 

Directions

  1. Preheat the oven to 350°F. Line a baking sheet with parchment paper and set aside.
  2. Combine the butter, brown sugar, and molasses in a mixing bowl. Whisk in the egg to form a smooth mixture.
  3. In another mixing bowl, whisk together the Kodiak mix, baking soda, ginger, cinnamon, and cloves.
  4. Add the dry ingredients to the wet ingredients and stir to form a smooth dough (careful not to overmix). Let sit for 10 minutes to allow grains time to absorb liquids.
  5. Divide the dough into 18 pieces and roll into balls. Roll each ball into the granulated sugar and place on the baking sheet, 2 inches apart.
  6. Bake in the preheated oven for 10 to 12 minutes, or until the tops are crinkled and just firm. Cool the cookies completely on wire racks.
  7. Store in an airtight container.
