Ingredients
- 1/2 cup Kodiak Buttermilk & Honey Frontier Cakes Flapjack & Waffle Mix
- 1 egg
- 1/4 cup water
- 2 tablespoons peanut butter
- 2 tablespoons strawberry jam
- 4 strawberries, stems removed, sliced
Directions
- Place the waffle mix, egg, and water in a mixing bowl and whisk together until smooth. Let sit a few minutes for liquids to absorb.
- Heat a skillet to medium-high and grease with butter. Pour the batter on the hot skillet and spread the batter out with the back of a spoon into a large circle, about 6 inches in diameter.
- Cook until bubbles form on the top of the batter, 60 to 90 seconds. Flip the pancake and cook an additional 30 seconds.
- Remove the pancake from the pan onto a plate and let cool.
- Spread the peanut butter and jelly on the pancake and place the strawberries in a line down the center of the pancake.
- Roll up the pancake, place on the plate, and top with additional peanut butter and strawberries, if desired.
