The taste of tart lemon and sweet raspberry combined with a punch of protein not only keeps your you fuller, longer, but also makes these delicious muffins a breakfast you and the fam crave. Better yet, meal prep these puppies a day or two in advance for an easy on-the-go breakfast or snack at the ready.

Ingredients
- 2 cups Kodiak Raspberry Lemon Power Cakes Flapjack & Waffle Mix
- 1/2 cup sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 cup water
- 6 tablespoons Kodiak Classic Rolled Oats Oatmeal Canister
- Raspberries, to top
Directions
- Preheat the oven to 375°F. Line a 12-cup muffin tin with cupcake liners.
- Place the flapjack mix, sugar, eggs, sour cream, and water in a large mixing bowl and whisk together to form a smooth batter. Let sit for five minutes for grains to absorb liquid.
- Divide the batter between prepared muffin tins, using a scoop to add about 1/4 cup of batter to each liner.
- Top each batter-filled liner with a few raspberries and a half tablespoon of oats.
- Bake in the preheated oven for 17 to 20 minutes, or until lightly golden brown on top.
- Remove from the oven and cool on a wire rack. Store in an airtight container.
