No time to split wood? This chocolate s'mores pudding pie recipe will help you satisfy those campfire cravings without all the smoke. No need for skewers or sticks, an open flame, or sticky fingers but still plenty of melted chocolate, crispy marshmallows, and crunchy graham crackers. It's a Kodiak spin on a childhood favorite that big and little bears will both love.
Ingredients
Crust:
- 3 cups Kodiak Honey Bear Bites, crushed
- 1/2 cup butter, melted
- 1/4 cup sugar
Filling:
- 2 cups semisweet or dark chocolate chips
- 1/2 cup sugar
- 1/3 cup cornstarch
- 2 tablespoon cocoa powder
- 1/2 teaspoon salt
- 4 egg yolks
- 3 cups milk
- 2 tablespoon butter
- 1 tablespoon vanilla
Directions
- Preheat oven to 350° F
- In a large bowl mix the crushed Honey Bear Bites, melted butter, and sugar until combined
- Press the mixture into a 9" pie pan
- Bake for 8-10 minutes or until golden. Let cool
- In a large saucepan, stir the sugar, cornstarch, cocoa powder and salt
- In a large measuring cup, whisk the egg yolks and milk together. Gradually whisk into the sugar mixture
- Place the saucepan over medium-low heat until the mixture comes to a boil. Let boil for 1 minute, stirring constantly
- Remove from heat and stir in butter and vanilla
- Stir in chocolate pieces until fully combined and melted
- Pour pudding into pre-baked pie crust
- Place in refrigerator for 4-5 hours to chill before serving
