Ingredients
- 2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 1 teaspoon cinnamon
- 1/4 cup brown sugar, lightly packed
- 7 tablespoons butter, cut into cubes, softened
- 1/3 cup honey
- 1 tablespoon water
- 1 teaspoon vanilla extract
Directions
- Preheat the oven to 350° F. Line a baking sheet with parchment paper.
- Place the Kodiak mix, cinnamon, and brown sugar in the bowl of a food processor fitted with an ‘s’ blade attachment. Pulse a few times to blend.
- Add the cubes of butter and process until the mixture resembles fine crumbs.
- Add the honey, water, and vanilla extract and process again until a smooth dough forms.
- Place the dough on a lightly floured surface and roll to a thickness of 1/8”. Cut the dough into 24 rectangles, re-rolling scraps if necessary.
- Prick each rectangle several times with the tines of a fork. Use a spatula to slide the rectangles onto the prepared baking sheet, 1 inch apart from each other.
- Bake in the preheated oven for 10 to 12 minutes, or until golden brown on the edges. Remove and let cool completely on the baking pan. Sprinkle with granulated sugar, if desired.
- Store in an airtight container.
