Ingredients

  • 2 cups Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
  • 2 teaspoons active dry yeast
  • 2 eggs, room temperature 
  • 1-3/4 cup whole milk, warmed
  • 2 tablespoons butter, melted
  • 2 teaspoons honey (optional)

Directions

  1. Place the Kodiak mix and yeast in a mixing bowl and whisk together.
  2. Add the eggs, milk, butter and honey (if using) and whisk to form a smooth batter.
  3. Cover and place in the fridge overnight.
  4. In the morning, heat a skillet to medium/high heat.
  5. Remove the batter from the fridge and gently stir.
  6. Grease the skillet with butter and pour 1/4 cup of batter onto the hot skillet into a circle. Cook for 20-30 seconds, or until bubbles form on top.
  7. Flip and cook another 15 seconds. Remove and repeat with remaining batter.
  8. Top as desired and serve.

 

*Pro-Tip: If you have sourdough starter, combine 1 cup of unfed sourdough discard and 1 cup Kodiak Buttermilk Power Cakes. Whisk in 2 eggs and 2 Tablespoons of melted butter. Cook your pancakes right away.

If your starter is bubbly and active, cover the batter and let sit overnight before cooking.
