Ingredients
- 1/2 cup Kodiak Buttermilk Power Cakes Flapjack & Waffle Mix
- 1/2 cup water
- 1 large egg
- 1 slice cheddar cheese
- 2 slices turkey bacon, cooked
Directions
- Whisk the Kodiak mix and water together in a small mixing bowl. Let rest for 3 minutes.
- Meanwhile, heat a large skillet over medium heat and grease well.
- Crack the egg into the skillet and season with salt and pepper.
- Divide the batter in half, scoop and spoon into a circle on the skillet, 2 inches apart to make two pancakes.
- Flip the pancakes and the egg when cooked halfway through. Continue to cook until the egg is at desired doneness and pancakes are golden on both sides.
- Remove pancakes from the pan. Top the egg with cheese and let melt slightly.
- Place the egg and cheese, and two slices of turkey bacon between the two pancakes. Enjoy!
*Notes: Pancakes and egg can be cooked in well greased circular molds if a uniform shape is desired.
