The recipe uses Kodiak Buttermilk Power Cakes and eggnog to give each cupcake a taste you can't help but crave, while a sweet frosting makes each cupcake a canvas for you to decorate with everything from shaved coconut to snowflake sprinkles!
Ingredients
Cupcakes
- 1 and 1/3 cup Kodiak Buttermilk Power Cakes
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/2 teaspoon salt
- 1/4 teaspoon nutmeg
- 2 large whole eggs
- 1/2 cup coconut sugar
- 1/4 cup melted butter or coconut oil
- 1 cup eggnog
Frosting
- 1/2 cup eggnog
- 1 cup softened butter
- 1 teaspoon vanilla extract
- 1/4 teaspoon nutmeg
- 1/2 cup powdered stevia
- 5-10 drops blue food coloring
Directions
Cupcakes
- Preheat oven to 350 degrees and line a mini cupcake pan with paper liners or non-stick spray.
- Combine all cupcake ingredients into a large bowl and mix on high until smooth.
- Divide and pour into cupcake pan.
- Bake for 15-20 minutes until a toothpick comes out clean when poked through the center.
- Remove from oven and let cool completely.
Frosting
- Prepare frosting by adding butter to a large bowl or stand mixer.
- Beat on high for 1 minute.
- With mixer on, add eggnog, vanilla, nutmeg, and food coloring.
- Beat on high for 1 minute.
- Slowly add in powdered stevia.
- Frost cooled cupcakes and add winter sprinkles if desired.
