Ingredients

Roasted Butternut Squash:

  • 2 cups butternut squash, cubed
  • 1 tablespoon olive oil
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey
  • salt and pepper to taste

 

Bruschetta:

  • 2 Kodiak Buttermilk & Vanilla Power Waffles
  • 4 tablespoons goat cheese
  • 1/2 granny smith apple, sliced
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey

Directions

  1. Preheat oven to 400° F.
  2. Toss butternut squash in olive oil, balsamic vinegar, honey, salt, and pepper.
  3. Place squash on a baking sheet and roast for 15-20 minutes, stirring halfway through, until caramelized and tender.
  4. Toast waffles on the lowest setting until crispy and hot throughout.
  5. Spread 1 tablespoon goat cheese on each waffle.
  6. Top with apple slices, roasted butternut squash, balsamic vinegar, and honey. Serve warm.
